white bean escarole soup

Ingredients
1 medium chopped onion1Tbsp olive oil2cloves garlic minced3 chopped sundried tomatoes4-5cups finely chopped escarole4cups chicken or vegetable broth1tsp salt1tsp pepper1tsp red pepper1/2 tbsp basil1tbs parmesan cheese2cups rinsed white beans (great northern/canelli)1can diced Italian style tomatoes in juice
Directions
cook chopped onions in 1tbs olive oil until transparent. add minced garilic, and chopped sundried tomatoes. Add finely chopped escarole until cooked. Rinse white beans and add remaining ingredients (i like to use the Italian style canned tomatoes). Serve hot. garnish with light sprinkle of parmesan cheese if you like:) yummy!
