Healthy Bran Muffins

Ingredients
1 c. Wheat Bran 1 1/2 c. cracked Buckwheat flour 1/2 c. raisins 1 tsp. baking powder 1 tsp. baking soda 1/2 tsp. sea salt 1 c. skim milk 1/2 c. molasses1/2 c. honey 2 TBS. Olive oil1 lrg egg, beaten & 1 egg white3/4 c. applesauce, ( un-sweetened )
Directions
Makes 16 muffins;
Preheat oven to 400 degrees
Combine wheat bran, Buckwheat flour, baking powder, baking soda, sea salt. Stir in raisins and nuts. In a seperate bowl, blend applesauce, milk, honey, molasses, oil, and egg blend. Add to dry ingredients and stir til just moistened. Spoon into muffin pan or paper liners, ( spray pan if liners not used ) and bake for 20 -25 minutes, depending on oven. cool on wire rack.. Delicious and healthy to boot!!!!
