Chicken and Sausage Jambalaya

Ingredients
Creole seasoning store bought or make it: 2 to 4 tsp cayenne pepper; 1 tbsp coarse salt; 1 tbsp white pepper; 2 1/4 tsp each thyme and black pepper; 1/2 tsp dried sage; 1/4 tsp each onion powder and garlic powder. Stores up to 3 months in cool, dry place. In skillet put olive oil or your choice of oil and brown sausage, then add chicken and sprinkle Creole seasoning over both and continue cooking until brown. Remove and put on plate. Add onion preferably Vidalia and green pepper and cook for 5 to 7 minutes stirring occasionally; add tomato sauce and chicken stock. You can then put everything in Crock Pot and cook for 45 minutes to 1 hr stirring occasionally. Or put in pot on stove to boil or bake in 350 degree oven until rice is tender (about 30 minutes).
