Chicken Salad Sandwiches (or salad)

(2) cups roasting chicken meat, light, chopped/shredded(2) Tbsp Light Helman's Mayonnaise (2) Sprigs worth of fresh thyme1/2 cup raw onion, diced1/2 cup celery, dicedgarlic powder to tastesalt and pepper to tasteFor sandwiches:(8) slices bread (I used a double bran low in carbs and high in fiber)(4) slices Lite Havarti cheese(4) leaves romaine lettuce (a crisp variety is best)(1) slice tomato
Place toast in toaster oven on toast setting or use toaster.
While bread is toasting, combine chicken, onion, celery, thyme, garlic powder and mayonnaise in a small bowl. Mix until well blended and taste to ensure satisfaction. Salt and pepper to taste.
When toast is ready, place cheese on lettuce and tomato atop bread and serve to happily awaiting faces!
Also fabulous on salad or crackers (or any other way you might eat your chicken salad :D
