Sugarless Icing

1 egg white3/4 cup Corn Syrup or Glucose Syrup (depending on country) (Australia is Glucose)1Tbsp Vanilla essence
Makes enough for one round cake or about 20 cupcakes
1. Combine egg white and corn syrup on top of double boiler.
- a large saucepan on top of a smaller one works just
as well ;-)
2. Cook over boiling water for 7 mins, beating continually with egg beater.
3. Remove from heat and add vanilla.
4. Beat until mixture stands in peaks.
**Best to be used just as the cake is being served to eat.
***Do not refrigerate as it goes to a sticky and yucky consistency, left on the bench is fine.

Sucrose is table sugar, corn syrup is made up of glucose which is more easily digested into the blood stream. This recipe is more for the thousands of people out there like myself that are sucrose intolerant, saying that its sucrose free in the title however is confusing to most people though...
