Mozarella & Mushroom Spinach Salad

Ingredients
2 cups fresh spinach leaves (less if desired)1 cup mushrooms (portabella, button, any)1 shallot sliced1/4 cup fat free swiss cheese 1 teaspoon olive oil for sauteeing2 tbsp fat free ranch dressing or preferred
Directions
*Rinse, drain, and let spinach dry on paper towels or pat dry.
*Wash and slice mushrooms
*Heat olive oil in skillet on med high heat add mushrooms and shallots. Once they begin to heat lower heat to med. Cover for quicker cook time (check and stir frequently).
*Transfer spinach to salad bowl. Place mushroom and shallot mix directly over the bed of greens. Sprinkle shredded mozarella over the sauteed veggies. Add dressing.
*Serve while sauteed veggies are hot to soften the spinach just a tad. Enjoy. Pinch of salt or pepper can be added if desired.
