Delish Rice and Lentils

Ingredients
1/5 cups whole brown rice200 grams (~8 oz) dry green lentils, soaked for about an hour2-3 carrots, shredded3 tbsp. canola oil1 onion, finely choppedseasoning:saltground black peppercumin
Directions
heat oil in medium size pot
stir-fry onion for about 5 minutes
drain and rinse lentils, add in
add rice and stir for about 5 more minutes.
add shredded carrots.
cover with 3 cups of boiling water, bring to reboil, cover and cook over medium flame for about 35 minutes. check after 20 minutes, if dry already add some more water.

remove from stoves and leave covered for about 10 minutes.

makes about 6 super-fullfilling sides, makes a great lunch with a green/tomato salad.
