Buttermilk Cinnamon Vanilla Waffles

* Soy Flour, 1 cup, stirred * *Splenda, 6 tsp * Cinnamon, ground, 2 tsp * Baking Powder, 3 tsp * Baking Soda, .5 tsp * Butter, unsalted, 6 tbsp * Buttermilk, .75 cup * *Sugar free Vanilla Syrup, 1 oz * Egg substitute, liquid (Egg Beaters), .75 cup
Heat waffle iron per manufacturers instructions. Whisk together soy flour, sugar substitute, cinnamon, baking powder and baking soda. Add buttermilk, butter, eggs and syrup and stir until well blended. Spray waffle iron with oil spray. Place approximately 3 tablespoons of batter in center of a waffle iron. Cook according to manufacturer's instructions until crisp and dark golden brown. Repeat with remaining batter. Serve warm.
