Hash Brown Potatoes

Ingredients
1 30 oz bag frozen hash brown potatoes, shredded3 Tbs melted butter1 can cream of chicken soup1 cup chopped onion1 1/2 cups sour cream, reduced fat1 1/2 cups shredded cheddar cheese
Directions
Combine all ingredients in large bowl. Move to 8 1/2" X 11" baking pan. Bake, uncovered, for 1 hour at 350 degrees.

Optional: sprinkle prepared seasoned breadcrumbs on top.

    I used Healthy Request Cream of Chicken, only 1 cup sour cream, eliminated the butter. I increased the cheese to 2 cups, but I used shredded colby/jack. My calories, when I put it in the recipe calculator were just under 250 per cup serving. It was delish! Definitely a keeper! - 9/9/09
