Lemon Blueberry Oatmeal

3 C oatmeal2 large eggs, beaten1 Tbsp canola oil2 C water1/2 C fresh squeezed meyer lemon juice (about 2 large lemons)3 C frozen, unsweetened blueberries1/4 C agave nectar
Makes 8 1/2 C servings
Mix oatmeal and beaten eggs together in mixing bowl. Make sure all oatmeal is coated with the egg. Add oatmeal to frying pan coated with 1 tbsp. canola oil and cook until oatmeal is dry and lightly toasted. Add water and lemon juice and cook until liquid is nearly all absorbed. Add blueberries and agave nectar and cook until liquid is absorbed and blueberries are no longer frozen inside.
