Ingredients
Directions
2 12 oz. cans Yellow Sweet Corn, drained1 12 oz. can of Baby Lima Beans, drained1/4 cup mayonnaise1 small can tomatoes with green chiles (Rotel or other store brand is good)
Makes at least 12 1/4 cup servings.
Open and drain corn and lima beans, and put in a mixing bowl. Open tomatoes and drain most of the liquid from the can, then put the tomatoes and remaining liquid in the bowl with the corn and beans. Stir in 1/4 cup mayonnaise.
Can be served immediately, but it's better with at least 1 hour refrigeration. It's also delicious with chopped green onions sprinkled in right before serving.
This recipe makes A LOT of salad, and it goes a long way, probably more than 12 1/4 cup servings.
