Breakfast "Fried" Rice

Ingredients
2 c. Long-grain brown rice, cooked1/4 c. egg substitute, or egg whites1/4 c. chopped onion1/4 c. chopped green peppers4 turkey sausage breakfast links, chopped2 tsp olive oil
Directions
Heat oil in skillet and add onion, peppers and sausage. Cook until veggies are tender. Add egg sub and scramble until desired doneness. Add rice, stir and heat thru. I make this on the weekend and reheat thru the week for a quick breakfast. You can add any veggies you want.
Makes about 4 3/4 cup servings
