2 lbs 31/40 count of frozen shrimp, raw, unpeeled3 tablespoons (9 tsp) champagne or honey mustard1/4 cup honey5 garlic cloves, pressured2 tablespoons lemon juicewooden skewers
Thaw and peel raw shrimp. In a bowl with a lid, combine shrimp, mustard, honey, pressed garlic, and lemon juice. Stir or shake (once lid is on). Let sit for half an hour to 24 hours.
Skewer shrimp. On high heat, cook for 10 minutes on the grill (about 5 minutes a side), or until done (shrimp will be pink). Remove from skewer and serve.
Yields ~8 servings (62-80 shrimp/8 servings = approx. 7-10 shrimp per serving)
Note: Because the marinade burns off on the grill, the calories for the marinade don't count much to your total calorie intake. Each shrimp (31/40 size) is approximately 5 grams when cooked, and each gram of shrimp is worth about a calorie.
