Taco Soup

Ingredients
1 pound lean ground turkey2 15 ounce cans Pinto or Black Beans (I use one can of each)1 15.8 ounce can Great Northern Beans or Navy Beans1 11 ounce can Whole Kernal Corn1 15.5 ounce can Hominy2 10 ounce cans diced tomatoes with green chiles (Ro-Tel)1 1.5 ounce package Taco Seasoning1 1 ounce package dry Ranch Dressing Mix1 cup diced onion, optional1 cup sweet pepper, diced, optional1/2 cup chopped cilantro, optional2 cups water1/2 cup sour cream, optional1/2 cup grated cheddar cheese, optional1/2 cup chopped scallions, optional
Directions
Directions:
Brown ground turkey; add ingredients from each can including liquid; add taco mix and ranch dressing mix; stir all ingredients until well combined and simmer about 20 minutes until hot through and through. You can add water to taste - not required but it will make a more soupy dish.

Serving suggestion: Try topping with a dollop of sour cream, grated cheese, a little diced scallions and some chopped cilantro just before serving.
