Homemade Macaroni and cheese

Macaroni, whole-wheat, 240 grams Butter, salted, 2 tbsp Onion 1/4 CupAll-Purpose White Flour 1tbspDry Mustard, 1/4 tspMilk, nonfat, 1.5CCheddar Cheese, 2 cup, shredded
Preheat oven to 350F.
Grease 2qt casserole.
Cook macaroni as per package directions.
While it is cooking, melt butter in saucepan. Add onion and saute until softened. Stir in flour, salt and pepper (if desired) and dry mustard. Continue stirring and add milk stirring constantly. (I use a whisk to decrease lumps).
Once thickened, and it will be quite thick, add half the cheddar cheese to the sauce. Remove from heat and mix well. Pour over prepared macaroni and mix well.
Pour prepared macaroni and cheese into casserole dish and cover with remaining cheddar cheese.
Bake until hot and bubbly, about 20 minutes.
Some people put cracker crumbs or breadcrumbs on top, but this adds alot of calories!
