Dairy-Free Oatmeal Pancakes

Ingredients
1 C steel cut oats1/2 C organic dairy free soy milk3 large eggs
Directions
Take all ingredients and put them in your blender. Blend till smooth. Pour into hot skillet with a little oil and cook till done.
Nutritional info is per pancake.
Top with whatever you like but be sure to add that to the nutritional info.

I am going to experiment with almond and rice milk since we really do not like to use much soy. That should not change the flavor but might change the nutritional info.
