Chicken or Beef Broccoli Stir Fry Recipe

2 chicken breast or 1/2 pound boneless tender beef steak2 tablespoon cornstarch, divided4 tablespoon soy sauce, divided1 teaspoon granulated sugar2 teaspoon minced fresh ginger root1 clove garlic, minced2 spears of fresh broccoli, trimmed3 tablespoons peanut oi or seseme oil divided1 onion, chunked and seperated2 cups of shredded carrots
Cut chicken or beef across grain into thin slices. Combine 1 tablespoon each cornstarch and soy sauce with sugar, ginger and garlic, stir in chicken or beef let stand 15 minutes.
Meanwhile, remove florets from broccoli, if large cut in half lenghtwise. Cut stalks crosswise inton 1/8 inch slices. Combine remaning cornstarch and soy sawuce with 1 cup of water. Set aside.
Heat 1 tablespoon of oil in wok or large skillet over high heat. Add meat and stir fry 1 minute, remove. Heat remaining oil in same wok. Add broccoli, onion , carrot and waterchestnuts, stir fry 4 minutes, or until vegetables are tender crisp. Stir in meat and soy sacue mixter bring to boil. Cook and stir until sauce thickens.
