1 large english cucumber - large dice5 roma toamatoes- large dice1 red or orange pepper - large dice1/2 cup thinly sliced red onion1 clove garlic (optional)2 tsp olive oil3 oz grated feta cheese1 tbsp fresh oregano1 lemon juicedsalt and ground black pepper to taste
Directions
combine all ingredients, season to taste and top with calamata olives if you have them. (optional) not included in the nutritional analysis
