Ingredients
Quinoa - 1 cupOnions - 0.5Carrots - 0.5Scallions - 1 cup choppedOlive oil - 1 tbsp
Directions
Prepare Quinoa, according to the package instruction. Approximate cook time is 15 min, ratio is 1:2.
While Quinoa is cooking, prep and cut onions and carrots. Add a spoon of olive oil to skillet and sautee onions and carrots until onion are golden and carrots are tender. After quinoa is ready, transfer it to skillet and continue to cook the mixture for 2-3 minutes to transfer the flavor onto quinoa. After the mixture is well mixed, set aside and add scallions. It is ready to be served as a side dish or as a quick healthy snack.
