Chicken, Zucchini & Mushroom Goulash

Ingredients
1 1/2 lbs of Chicken Breast, cut up into bite size pieces6 3/4 Cups of Zucchini, cut up2 1/2 Cups of Mushrooms, sliced2 Cups of Fresh Tomato Puree (approx. 3 med. tomatoes)2 Tbsp of Olive Oil6 Cloves of Garlic, crushed2 Tsp of Morton Lite Salt1/4 Tsp of Ground Black Pepper1 1/2 Tsp of Basil, dried1 1/4 Tsp of Thyme, ground
Directions
Heat your olive oil in a large pot. Place and cook chicken pieces in pot, along with all the spices. Then pour the tomato puree into your cooked chicken mixture and mix well. Then add your zucchini and mushrooms into the mixture. Bring your chicken/vegetable mixture to a boil, reduce heat to a simmer and simmer for 25 minutes.
