Omelet roll up

6 eggs1 cup 1% milk1/2 cup flour1 tsp salt.5 tsp black pepper1 cup low fat cheddar3/4 cup diced ham (extra lean)
1. Preheat oven to 450 degrees F (230 degrees C). Line pan with parchment paper so that it comes up the sides a bit. (the first time I made this I cut it to fit and the egg just ran under the sides... duh...what a mess!)
2. In a blender, combine eggs, milk, flour, salt and pepper; cover and process until smooth. Pour into prepared baking pan.
3. Bake in preheated oven until set, about 20 minutes. Sprinkle with cheese and ham or other toppings.
4. Carefully lift edges of parchment and starting from the short edge of the pan, carefully roll up omelet. Place omelet seam side down on a serving plate and cut into 6 equal sized pieces.
The parchment makes it super easy to roll up the omelet.
