Brown Rice Salad with Edamame

Ingredients
Package of Trader Joe's frozen Soycutash (mixture of edamame beans, corn and red peppers) or just use a package of frozen edamame.2 cups cooked brown rice (I use the frozen packs at Trader Joe's)Salt and pepper to tasteDRESSING INGREDIENTS:2 TAB lime or lemon juice2 TAB rice vinegar3 tsp. sesame oil1 tsp. sugar
Directions
Microwave rice and frozen vegetables until thawed, then combine and sprinkle with a little salt and pepper. Combine dressing ingredients and whisk together in bowl. Pour over rice/veggie mixture and toss lightly. Can be served hot or cold. Delicious!
