Slow Cooker Chicken & Hominy Chili

2 tsp vegetable oil1 large garlic clove, minced1 small onion chopped, 1 medium yellow summer squash, diced1 cup chopped tomatillos, about 4 medium15 1/2 oz. can hominy, drained and rinsed1 medium jalapeno cored, seeded, and minced. Do not touch seeds with bare hands.1/2 tsp. salt1/2 tsp. dried oregano1/4 tsp ground cumin1/4 tsp black pepper1 tbsp uncooked corn grits, regular variety1 pound uncooked boneless, skinless chicken breast, cut into bite size pieces.1 1/2 cups fat free chicken broth
Saute minced onion and garlic, put in slow cooker. Chop jalapeno, be careful not touch seeds of jalapeno when chopping, add to pot. Cut chicken into cubes and add to pot with the rest of the ingredients. Stir well making sure grits are not lumped together. Cook on low heat for 4 or 5 hours.

This is delicious! I made it subbing in the ingredients I had in my pantry (can of diced tomatoes instead of tomatillos and left out squash, used ital seasoning instead of plain oregano) and it was OH SO GOOD!!!!!!!Will make again. Even my 10 year old ate it up! Thanks for sharing this yumminess! - 3/12/11
