Tomato Sauce w/ Brandy

1 1/2 tsp - Extra-Virgin Olive Oil3 cloves -Garlic, minced2 14.5-ounce cans - Diced Tomatoes, drained4 tbsp - Basil, chopped3 tsp - Splenda1/4 cup - BrandySalt, Pepper & Onion Powder to tasteItalian Seasoning Mix to taste (optional)
1) Heat oil in a large nonstick skillet over medium low heat. Add garlic and and onions, sauté until softened, about 4 minutes. Stir in tomatoes, basil and splenda. Simmer, uncovered, until sauce has thickened slightly, about 15 minutes.
2) Stir in brandy and season with salt, pepper onion powder, and italian seasoning mix. Simmer for about 5 more minutes till alcohol cooks off.
