Mango Slaw

Ingredients
2 cup cabbage, fresh, chopped1 mango, without refuse1/4 cup onion, chopped1 cup red pepper, chopped1/2 large cucumber (peeled)Juice of 1/2 lemon1/2 tsp black pepper1 medium tomato1 tsp salt
Directions
Place everything in a food processor and pulse until the consistency of cabbage slaw.
You could use a knife to chop very fine.
I use sea salt - and salt of any kind is optional.

    Love this combo of ingredients. I used green onions, pre-packaged slaw mix and made dressing by combining Galeos Honey Dijon dressing (the best dressing and what they used on The Biggest Loser) and some curry powder. Awesome. - 1/22/08
