Veggie Onion Sandwich

Ingredients
2 slices of whole wheat bread1 tsp olive oilChopped veggies (my favorite combo is eggplant, zucchini, and mushrooms; but I've also used red and yellow bell peppers)1/3 an envelope of Onion Soup Mix Slice of Mozzarella
Directions
Heat oil in a skillet over medium heat
Rinse and chop the veggies according to preference
Add the veggies to the skillet and sautee for a minute
Mix in the Onion Soup Mix, and cook until the veggies are tender-crisp.
Put them on bread (I like the bread lightly toasted) and top with cheese.
