Baked Spinach and Cheese Polenta

Ingredients
1-3/4 cup water1-3/4 cup chicken or vegetable broth1 cup dry polenta1/3 + 1/4 cup feta or other crumbly cheese1/2 cup mozzarella cheese, separated in half1/4 cup reduced or fat free sour cream1/4 cup tomato sauce1 tbsp olive oil1 tbsp minced garlic1 10 oz package frozen spinach or one bunch fresh spinachSalt/Pepper/Herbs to taste
Directions
Preheat oven to 400F/200C.

Heat olive oil in a medium sauce pan; saute garlic for thirty seconds, then add spinach and saute. When finished, set aside.

In a large saucepan, bring water and broth to a boil. Add garlic. Slowly add polenta, stirring continuously. As the polenta begins to thicken, stir in 1/3 cup feta and 1/4 cup mozzarella, and herbs to taste.

Grease an 8x8 pyrex pan and layer half the polenta in the bottom. Over the top spread the sauteed spinach, the sour cream, the tomato sauce, and 1/4 cup feta. Quickly spoon the remaining polenta over the top and spread evenly. Sprinkle 1/4 cup mozzarella cheese over the top.

Put in the oven and bake for 20 minutes. Remove from oven and allow to sit for 5-10 minutes before serving.
