Black Bean Burritos

1 Tbsp. extra virgin olive oil1 small onion, chopped1/2 medium red bell pepper, chopped1/4 jalapeno pepper, chopped1 clove garlic, chopped finely1 - 15oz can black beans3 oz low fat cream cheese3 Tbsp. fresh cilantro, chopped coarsely3 Ole tortillas
1. In 10 inch skillet, heat oil over medium heat.
2. Add onion, bell pepper, jalapeno and garlic to pan. Cook approximately 2 minutes or until semi-tender.
3. Add black beans. Cook another 3 minutes until heated through.
4. Cut cream cheese into chunks and add to pan. Stir into mixture until melted.
5. Add cilantro, stir.
6. Divide stuffing into 3 and add to tortilla. Serve immediately.
