Veggie Pita Pizza

Ingredients
1/2 C chopped zucchini1/2 C chopped sweet red pepper1/2 C chopped green pepper2 tbs chopped onion1 garlic clove, minced2 tsp butter1/8 tsp Italian seasoning1/8 tsp dried oreganoDash pepper1 Flatout Multigrain Pita1/3 C chopped seeded tomato1/3 C shredded Italian cheese blend
Directions
1. Saute zucchini, peppers, onions and garlic in butter until tender. Sprinkle with Italian seasoning, oregano and pepper; toss to coat.

2. Place the pita on an ungreased bakingsheet. Spoon veggie mixture onto pita. Top with tomato and cheese.

3. Bake at 450 degrees for 8-10 minutes or until cheese is melted.

    I used to make these with the whole wheat pitas and use regular pizza toppings on them for the kids but use part skim mozzarella and spinach sprinkled with garlic for mine!Turns out the kids began to want mine instead of theirs! - 10/5/09
