Creamy Potato Asparagus Soup

Ingredients
4 cups diced red potatoes, 1 bunch asparagus (24 stems) diced, 1 medium onion diced, 2 1/2 cups no chicken broth and 1 1/2 cup water, salt & pepper to taste.
Directions
combine potatoes, broth, onion and spices. cook until potatoes are tender. add chopped asparagus and cook until they turn bright green. by batches puree soup in blender (you can leave some unpureed if you like a chunkier soup). reheat pureed soup and serve.

    This was great! I sauteed 1/2 c carrots and a 1/2 c celery with the onion before adding the potatoes and then I seasoned with 1/2 t ground coriander, 1/2 t cumin, and 1/2 t thyme. I also used 2 cans of asaparagus instead of fresh. My husband and son finished the whole pot! - 9/26/10
