1 tbsp olive oil1 cup onion, chopped1 tbsp fresh grated ginger1 tsp cumin seed1 tsp tumeric.5 tsp red pepper flakes4 cloves garlic, minced2 cups cauliflower florets2 cups tomato1 cup dried lentils2.5 cups water2 tbsp fresh lime juice1 tbsp fresh cilantro, minced.75 tsp salt
heat oil in large saucepan over med-high heat, add onion, ginger, cumin, tumeric, red pepper flakes and garlic. saute for two minuted or until onions are opaque.
Add cauliflower and tomato, heat through. Stir in chickpeas and bring to a boil
Cover, reduce heat and simmer for 35 minutes of until chickpeas are tender
Serve each portion over 1 cup rice
