The BEST Banana Bread

Ingredients
1 1/4 c Whole Wheat Flour1 c Barley Flour*1 t Baking Powder1 t aking Soda1/2 t salt1 t cinnamon, ground2 large or 3 small bananas, mashed1/2 c applesauce, unsweetened1/3 c sugar in the raw1 T ground flax seed meal**3 T Water1/2 c Raisins2 t Vanilla Extract3/4 c Silk, Very Vanilla Soymilk,1 T Lemon juice
Directions
Preheat oven to 350°.

Mix flours, baking powder, baking soda and cinnamon in a large bowl.

In another bowl mash bananas and mix in remaining ingredients.

Pou the wet ingredients into the dry and gently mix just until combined.

Pour into 9" X 5" loaf pan and bake for 70 minutes until a toothpick inserted in the center comes out clean.

Makes 15 slices.

*You can use all whole wheat flour if you don't have barley flour, but it does make a denser, drier loaf of bread.

**Or other egg replacement equal to one egg

    I LOVE this banana bread recipe and make it regularly. To mix things up I sometimes put dried blueberries in instead of raisins. It also freezes well, so I sometimes bake 2 loaves and freeze one for later. - 1/2/11
