Rustic Roasted Chicken Salad

Ingredients
1/2 cup Chicken Breast,boneless,skinless1/4 cup Chicken, Dark meat, no skin2 large Hard Boiled Egg Whites only1 TBS Onion,chopped1 Lg Celery, stalk,chopped10 Grapes Red, quartered2 TBS Pecans, chopped5 TBS Kraft Light Mayo w/Olive Oil
Directions
This recipe as described yields 4 servings about 1/2 cup each.

1) If using home prepared chicken, prepare as you normally would. If using a store bought rotisserrie chicken, remove the skin and separate the meat from the bone (add 15 minute prep time).

2) Dice hard boiled egg whites and chicken

3) Chop celery and onion

4) Quarter grapes

5) Mix in bowl with 5 TBS of Kraft Light Mayo w/Olive Oil

6) Add chopped pecans to top of salad

***I like my salad chunky,rustic style, but this salad would also be good mixed in a good processor,

Serve in a Pita, on top of salad greens, or on your favorite bread.
