.25 cup of toasted quinoa1 tablespoon of pine nuts1 small eggplant sliced (spray with olive oil spray and sprinkle w/ red curry, cumin, salt, and pepper on both sides).33 cup of your choice of sprouts.5 cup flat leaf parsley (rough chop)dressing: mix .25 cup of yogurt w/ 1 tablespoon of curry peanute butter (www.pbloco.com)
Directions
prepare quinoa (after toasting)
grill eggplant (5+ minutes on each side over medium heat)
plate: spread quinoa on plate; sprinkle w/ sprouts and parsley, top with chopped / grilled eggplant & pinenuts; pour dressing on top
