Southwest Style Chicken and Wild Rice

Ingredients
12 oz. chicken breast, cut into pieces1 can Green Giant Southwest Style Corn2.5 cups organic chicken soup broth (optional)1 red bell pepper, diced1/2 medium onion, diced1 cup Long grain brown wild rice1 tbsp. olive oilChili powder to tasteCilantro to taste
Directions
Combine 1 cup long grain brown wild rice with 2.5 cups chicken broth. Bring to a boil and then simmer on low for 50 minutes, stirring occasionally.

When about 15 minutes remain for the rice, stir together olive oil, chicken, peppers, onions, and southwest style corn in a large wok or cooking pot. Cook and stir for approximately 15 minutes, adding cilantro and chili powder to taste. If you time it right, the chicken should finish at the same time as the rice.

Serve chicken mixture over rice and enjoy!

Makes about 4 servings
Each serving = about 1 cup of rice and 3 oz of chicken with plenty of veggies.
