Broccoli Cole Slaw

* 1 bag (3-ounce) Ramen Noodle Soup in Oriental flavor (other flavors will work, too)* 1 bag (12-ounce) bags Broccoli Cole Slaw (in the bagged salad section of the grocery store - "Rainbow Cole Slaw" or shredded cabbage make good variations as well)Dressing Mix:* 1/8 cup canola oil* 1/8 cup brown or white sugar (I prefer brown)* 1/8 cup apple cider vinegar* 1 ramen noodle seasoning packet
Start by crushing the package of ramen noodles into small pieces. Heat a couple teaspoons of the canola oil in a frying pan (just enough to coat the bottom when heated) and add the crushed noodles. Fry until golden brown, then remove from heat.
Then, mix the rest of the canola oil, vinegar, sugar, and seasoning in a small bowl with a fork til blended well.
Pour the bagged cole slaw into a large bowl (one with a tight-fitting lid makes mixing easy), pour the dressing over the top, then blend well (if your bowl has a tight fitting lid, you can shake it up, flip it around, etc). If you'll be serving within a few hours, go ahead and add the crushed noodles now. If not, put them in a ziplock baggie and add just before serving (otherwise, they'll soak up dressing and get soggy).
Lasts in the fridge for about three or four days, depending on how fresh your veggies are to start. Makes 4 servings, and multiplies great for potlocks and parties!

Love the recipe - but nutrition is probably off - unless you eat really big servings, this recipe makes more than 4 servings (although for my teenage daughter this probably makes 2 servings). - 5/6/10

one bag of broccoli cole slaw or rainbow cole slaw is 4 servings (according to the package). it does make for fairly large servings, but i usually have this and some sort of protein source as a simple "meal-to-go" rather than as a small side with a main dish and other sides. :)
