10 medium potatoes white cooked and mashed hot2 cups cheddar or american cheese can use 1/2 and 1/21/4 cup parkay fat free liquid margerine1 tsp garlic2 tbsp chives1 tbsp sea salt 1 Large cook pot 3/4 filled with water and a tsp salt and spray top water with nonstick spray -- bring to rolling boil and reduce heat to medium high adding pierogies and cooking 5 minutes after they float to top.Dough:2 cups flour white1/3 cup egg beaters1tsp baking powder1tsp salt2 tbsp fat free 1/2 and 1/22/3 cup cold water
Add cheese,margerine,salt,chives,garlic powder and mashed potatoes together and allow cheese to melt. put to the side to cool to room temp.
Dough: Place 2 cups flour,salt,baking powder, egg beaters, half and half in food processer adding water slowly to flour mixture with processer on low speed. Add enough water that dough forms a ball, and turn off immediately. Roll dough out thin on a well floured surface and using an empty round plastic container(small margerine container) cut out circles by twisting. Place 2 tblsp potatoe mixture on each circle and fold over sealing ends together. I like to use fork tines dipped in flour and go over edges again so they seal properly . Cook( Very Hot) in salted sprayed water but not boiling or pierogies will fall apart -cook for 5 minutes after they come to the top. Remove with slotted spoon and place on a well sprayed cookie sheet to cool and spray tops with non stick spray. At this time you can either eat them with butter and onions or fry them or deep fry them. The calories here are just for boiled and sprayed add additional calories as you choose. fresh broccolli or carrots taste great as a side for a meatless meal. 48 pierogies 1 per serving
