Ingredients
2 onions, chopped6 cloves garlic, minced2 T. chili powder2 tsp. dried oregano2 28oz. cans crushed tomatoes2 ˝ c. water2 10.5 oz. cans condensed chicken broth2 c. corn2 c. hominy2 4oz. cans green chiles2 15oz. cans black beans, drained and rinsed˝ c. fresh cilantro, chopped4 boneless chicken breats, cooked & chopped.TOPPINGSCrushed tortilla chipsSliced avocadoMontery jack cheeseChopped green onionlimes
Directions
In pot-heat oil, saute’ onions and garlic until soft. Stir in-chili powder, oregano, tomatoes, broth, and water…bring to boil, then simmer for 10 minutes. Add- corn, hominy, chillies, beans, cilantro and chicken…bring to boil, then simmer again for 10 minutes. The calories are figured on a 1 c. serving.

    I make it and freeze it in ziploc baggies, perfect size for lunch, it can even be thrown in the microwave!

    This was very good and flavorful, the only problem I am having is trying to get the nutrition correct for the ingredients I used....I can't seem to get the calories down to what this list.....mine is still not bad under 200 for a 1 cup serving.....but I am not sure where I can cut any more - 4/17/13

    I loved this! I tweaked it a little bit. I added extra corn since hominy wasn't in my pantry. I also replaced one can of green chiles with fresh jalapeno peppers and used extra chicken broth (since I had a box open) instead of water. DH loved this as a dip, LOL. He dipped tortilla chips in it. - 2/23/13
