Broccoli Cheese Soup

Ingredients
2 lb package frozen chopped broccoli1 lb Velveeta Light 1 medium onion chopped2 tbsp butter or margarine2 cups skim milk3 cups watersalt to taste1/2 cup cornstarch
Directions
Simmer broccoli in water for 15 minutes.

Saute onions in butter until translucent, add milk to onion mixture. Once the milk is heated add it to the pot with the broccoli and water (do not drain the broccoli). Do not allow milk to boil.

Turn heat down to low.

Cut Velveeta light cheese into cubes and add to the pot. Stir constantly until cheese melts.

Mix cornstarch with a little water and add to the pot. Turn heat up to medium and stir constantly until soup thickens to desired consistency. Do not let the soup boil or it will cause the milk to separate.

This makes approximately 10 one cup servings - 3 Weight Watcher points.
