Crockpot Hungarian Beef Stew

Ingredients
8oz cubed beef1 1/2 cups of cauliflower florets2 cups of chopped kale1 medium onion chopped into about 1 inch pieces4 medium red potatoes chopped into 1 inch pieces1 cup sliced okra1 cup chopped yellow squash1/2 cup cooked chickpeas1 28oz can of crushed tomatoes1/2 cup of stock (your choice)2 tbsp paprika1 cup reduced fat sour creamsalt and pepper to taste
Directions
- Combine all ingredients EXCEPT for the sour cream in the crockpot.
- Cook on low for 7 hours
- Stir in sour cream about 10 minutes before serving
- Enjoy!
