Italian Turkey Stew

1 (20 ounce) package of Jennie-O Italian Seasoned Ground Turkey1 medium red onion, chopped1 medium yellow onion, chopped1 medium fennel, chopped5 cloves garlic½ cup dry red wine2 cups cubed and roasted butternut squash1 (28 ounce) can whole tomatoes, crushed by hand1 tsp ground cumin1 tsp ground curry powder2 cans baby butter beans4 cups chicken brothExtra virgin olive oil
1. Heat 2 tablespoons olive oil in a Dutch oven; then add in red onion, yellow onion and fennel. After they have softened, about 5 minutes, add in chopped garlic. Let soften about 2 minutes, being careful not to burn the garlic.
2. Add the ground turkey to the pot, cooking until no pink remains. Add the red wine to deglaze the pot.
3. After crushing the tomatoes by hand, add to the pot, along with the squash, curry powder, cumin, butter beans and chicken broth. Simmer until vegetables are tender.
