Chicken Stuffed with Orange Rice

Ingredients
3 cups cooked brown rice3 5oz. boneless, skinless chicken breasts (pounded thin)2 tbsp olive oil3 cloves garlic, minced1 cup dry white wine/white cooking wine1 cup orange juice2 tbsp cornstarch, dissolved in 1/4 cup waterSalt, pepper, fresh herbs as you like & to taste
Directions
Stuff chicken breasts with rice.
Saute' garlic in olive oil 2 minutes.
Add stuffed chicken breasts, browning on all sides (approximately 3-4 minutes per side on med-high heat). Remove chicken and set aside.
Combine wine & OJ in skillet, add chicken back to skillet. Reduce heat & simmer 30 minutes or until chicken is cooked through.
Slice each breast into halves or thirds (depending on size after cooking)
Add cornstarch& water mixture to pan, stirring frequently until sauce thickens.
Serve remaining rice with chicken & sauce.

    I added fresh parsley and thyme and garnished with green onions. It was very good. - 3/20/07
