Ginger Pineapple Chicken- 5 one-cup servings

Ingredients
1.5 lbs. chicken breast, cut into strips2 green onions, thinly sliced1 can pineapple tidbits, with juice1/4 c chicken broth2 T. Soy Sauce1 T. Splenda brown sugar1/2 tsp ground ginger1/4 tsp garlic powder1/4 tsp salt1/4 tsp pepper2 T cornstarch2 T. water
Directions
Place chicken and green onions in slow cooker.
Combine broth, soy sauce, sugar, ginger, garlic powder, salt and pepper with juice from pineapple. Pour over chicken.
Cook on LOW 4-6 hours or HIGH 2-3 hours.
Mix together cornstarch and water, stir into slow cooker and add pineapple tidbits. Cook 20 minutes on low.

    Easy, delicious! I cut the chicken into strips 1st, cooked them on the griddle, heated all else in a stockpot, dumped it all into the crock and ate it 2 hrs later. Then ate more, like take-out! Oh, I didn't use cornstarch, it doesn't need it. I also used fresh ginger & garlic (x3 dry is equiv). Yum! - 4/19/12
