Whole Wheat Crepes

Ingredients

1 cup skim milk2 tsp unsalted butter, melted4 egg whites1/2 cup water1 cup whole wheat flour2 tsp sugar1/4 tsp salt
Combine milk, butter, water and egg whites in a blender and process until combined. Add dry ingredients and blend until batter is smooth. Cover and refrigerate batter for 1 hour
Heat an 8 inch non-stick skillet over medium high heat. To make a crepe, swirl 1/4 cup of batter so that the entire bottom of the pan is coated. Let cook for 1-2 minutes, or until the sides pull away from the pan. Carefully remove crepe and flip over, cooking other side for approximately 30 seconds. Layer cooked crepes in between layers of wax paper to keep from sticking. Fill and top crepes with desired ingredients. (I filled mine with low-fat cream cheese and topped with mascerated warm strawberries)
