Shredded Chicken Spread

Ingredients
3/4 lb. boneless skinless chicken breast1 pkg (8 oz) fat free or reduced fat cream cheese, softened1 small onion, minced1 celery rib, minced1 jar (2 oz) chopped pimiento1/2 t. salt1/2 t. ground black pepper
Directions
combine chicken and enough water to cover in 1 4 qt. saucepan over high heat. Heat to boiling. Reduce heat to low and cook 10 minutes or until thermometer inserted in the thickest breast registers 160 degrees F and juices run clear. Remove chicken to a plate to cool. With 2 forks, pull chicken into shreds. In a large bowl, combine chicken, cream cheese, onion, celery, pimiento, salt and pepper. Cover and refrigerate at least 2 hours to meld flavors. Makes 4 servings.
