Sugar Free Freezer Jam

2 T lemon juice2 T water2 C frozen strawberries, thawed and diced1 C sugar substitute equal to 1 C sugar1 env. unflavored gelatin1 1/2 t cornstarch
Makes 8 quarter-cup servings
Combine lemon juice, water, gelatin, and cornstarch in saucepan. Heat slowly, stirring constantly, until gelatin and cornstarch dissolve. Add fruit to mixture. Heat to boiling point over low heat, stirring constantly. Boil 3 minutes. Remove from heat and add sugar substitute. Pour into jelly jars and cover. Let set a room temperature until cooled. Store in refrigerator or freeze.
