Black Bean Fudge Cakes (Clean Eating Recipe)

Ingredients
olive oil cooking spray1 oz dark chocolate1 1/2 cups soft-cooked black beans, rinsed & drained2 eggs1 egg white2 tbsp olive oil1/4 c heaped unsweetened coccoa powder1 tsp baking powder1 tsp vanilla extract1/4 c unsweetened applesauce1/2 c honey1/4 - 1/2 c chopped walnuts
Directions
preheat oven to 350
spray 8 in square baking dish
*melt dark chocolate with 1 tbsp water
*combine melted chocolate, beans, eggs, egg whites, oil, coccoa powder, baking powder, vanilla, applesauce & honey in food processor/blender until smooth. Stir (or blend) in walnuts.
*pour into pan
*bake fro 30 min until tops are dry and the edges start to pull away from side of dish
**garnish with dollop of nonfat greek-style yogurt if desired.
