Whole Wheat Applesauce Pancakes (made with yogurt)

Ingredients
1 c. Wheat flour 1 tsp. baking soda1/8 tsp salt2 tbsp. instant oats1/2-1 tsp. Cinnamon1 c. Dannon light and fit vanilla yogurt1/4 c. applesauce plus 2 tsp. applesauce1 large egg white, slightly beatenCooking spraySugar-free pancake syrupFresh fruit slices (optional)
Directions
1.) Combine flour, baking soda, salt, oats, and cinnamon in a medium bowl; make a well in the center of the mixture.
2.) Combine yogurt, applesauce, and egg white. Add to the dry mixture, stirring until just moistened
3.) Heat a nonstick griddle or skillet coated with cooking spray over medium heat.
4.) For each pancake, pour 1/4 cup of mixture onto the griddle/skillet, spreading to 5-inch circles. Cook pancakes until tops are covered with bubbles and edges look cooked, then turn pancakes to the other side.
5.) Serve with syrup and fresh fruit (both not included in nutrition facts).

Makes 10, 5-in. pancakes. Serving size is one pancake.
