8 oz Rotisserie Chicken (no skin)1/4 c. Green or Red Pepper1/4 c. Chives or Onions1 Can Enchilada Sauce1 Can 98% fat free Cream of Chicken Soup1 Can Black Beans (I used 2 cups, after prepared from dry)1 C. frozen Corn1 Can Diced Tomatoes with Chillies2 C. Skim Milk(recipe called for 1 c. Cheddar and 1 c. Monterey Jack)but, to save some calories, I used:3/4 c. Mozzarella (heaped)1/4 c. Cheddar (slightly less)
Add all ingredients, except cheeses. Add cheese right before serving. If desired, may top with tortilla chips. Makes 10, 1 cup servings. I also added another cup of water, for more volume.
