Broccoli Casserole

Ingredients
Cheddar or Colby Cheese, Low Fat, 4 oz shreddedWhite Rice, long grain, 1 cup cookedMushrooms, fresh, 1 cup, pieces or slices Onions, raw, 1 cup, chopped Milk, nonfat, 1/2 cup Margarine 1 tbsp (remove)Broccoli - Chopped and Cooked, 4 cup (or two 10 oz packages of frozen brocolliSalt to taste
Directions
Preheat oven to 350 degrees. Spray 2 quart casserole with non-stick cooking spray. In skillet sprayed with non stick cooking spray, saute onions and mushrooms til tender. In 3 qrt saucepan, combine al ingredients except broccoli and salt and cook over medium heat stirring frequently, until cheese and margarine are melted. Add broccoli and salt and cook until broccoli is heated, about 2-3 minutes. Pour mixture into casserole dish and bake until mixture is heated through and brocolli is tender, about 30 minutes. Makes 4 servings.
